I stand before you with a huge smile on my face.
Why, you may ask? For two reasons.
One. This is my first post ever on my brand new baking blog that I have been dreaming about since forever (actually, that may not even capture the length of time). I can’t even explain how happy I am, but in case you wanted a gauge of my happy level, just imagine this:
Imagine your favorite thing in the whole wide world…anything you want. Is it dessert? If yes, we are two steps closer to being bff’s and if not, it’s okay, we can be friends too. Now, imagine that you have an endless supply of your favorite thing, and that whenever you wanted it, all you had to do was think about it, and it would appear. Oh, and I forgot to mention that if by chance your favorite thing changed over time, your new favorite thing would take its place.
How happy would that make you? Pretty darn happy, right?
Two. Triple Peanut Butter Brownies.
The name pretty much says it all, but before you read further, I have a tiny confession to make.
I used a box mix instead of making the brownies from scratch. Forgive me? In my defense, I actually prefer box mix brownies. I know, blasphemy, but can you really blame me? Box mix brownies always come out perfectly chewy with the right amount of gooey batter in the middle, they don’t take long to put together, and they involve only four ingredients (counting the mix). What’s not to love? Plus, if you’re like me, when you crave brownie-right-out-of-the-oven heaven, waiting more than an hour is pure torture. Just don’t do that to yourself. It’s too painful.
That being said, I’m not opposed to vamping up box mixed brownies every once in a while. Hence, the peanut butter.
If you’re a peanut butter lover, these brownies have your name written in big bold letters all over them. There’s a layer of peanut butter patties on the bottom, creamy peanut butter mixed into the batter, and then a hardened peanut butter drizzle on the top. If you’re worried it’s peanut butter overload, I don’t blame you, I worried about it too. But, I promise you’re worrying for nothing. These brownies are the perfect balance between fudgy chocolate goodness and peanut butter creaminess. In fact, I would say it’s a match made in baking heaven. Just go make them, you’ll see.
Triple Peanut Butter Brownies
1 box fudge brownies (I used Betty Crocker)
2/3 cup vegetable oil
¼ cup water
1/3 cup + 2 tablespoons creamy peanut butter
2 boxes of Girl Scout Peanut Butter Patties (I stocked up on these, but if you don’t have any, you could use Keebler’s Peanut Butter Filled cookies)
Preheat oven to 350 degrees and grease an 8×8-inch square pan. Then set it aside.
In a medium bowl, combine brownie mix, water, oil, and egg. Add 1/3 cup peanut butter. Mix until well combined.
Line the prepared pan with Peanut Butter Patties (I ended up using 19 full cookies and breaking one in half to fill the empty edges).
Pour the brownie mix over the Peanut Butter Patties and spread into an even layer.
Bake for 38 to 41 minutes, or until toothpick comes out almost clean. Then remove from oven.
Melt 2 tablespoons creamy peanut butter until it’s of drizzling consistency (about 45 seconds).
Drizzle peanut butter using a fork or spoon over the brownies, and put brownies back in the oven for another minute.
Let brownies cool slightly before eating (I covered mine with foil and set them aside until after dinner. If you do this, I recommend heating a piece up for 30 seconds before eating. They taste amazing cooled, but even better warmed up).
